A hearty, make-ahead sausage pasta bake with mozzarella and spinach — simple, satisfying, and perfect for Sundays.

Ingredients

  • 1 pound penne pasta
  • 1 pound Italian sausage (mild or spicy)
  • 3-4 large handfuls fresh spinach
  • 4 cups tomato sauce (homemade or your favorite jar)
  • 1/4 cup heavy cream
  • 1 cup Parmigiano Reggiano, grated
  • 7-8 oz mozzarella cheese, divided
  • Salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until just al dente. Drain and set aside.
  2. In a large skillet over medium heat, cook the sausage, breaking it apart as it browns. Once fully cooked, stir in the spinach until wilted.
  3. In a large mixing bowl, combine the cooked pasta, tomato sauce, heavy cream, Parmigiano Reggiano, half of the mozzarella, and the sausage-spinach mixture. Stir until everything is evenly coated. Taste and season with salt if needed.
  4. Pour the mixture into a 9×13-inch baking dish. Top with the remaining mozzarella and bake at 375°F (190°C) for 30 minutes, or until the cheese is melted and golden around the edges.
  5. Let rest 5 minutes before serving. Enjoy warm with a green salad or a loaf of crusty bread.
